Cashews are a great source of iron and zinc, which play a key role in health and immunity. With winter in full swing, use this recipe to add cashews into your day.

Serves: makes 8 rolls

Ingredients

  • Cashews - 100g (3/4 cup)
  • Fresh dates - 100g (3/4 cup)
  • Lemon juice - 1 tablespoon
  • Lemon rind - ½ teaspoon
  • Chia seeds - 1 tablespoon (optional)

Method

  1. Place cashews and dates in a food processor and blend until well combined
  2. Add lemon juice/rind and blitz for a further 5 seconds
  3. Form tablespoon of mixture into roll shapes (approx 30g per roll)
  4. Optional: Place chia seeds on a plate and roll rolls to coat

Storage: Store in airtight container in fridge for up to a week or freeze and take out as needed
