Ingredients
- Cashews - 100g (3/4 cup)
- Fresh dates - 100g (3/4 cup)
- Lemon juice - 1 tablespoon
- Lemon rind - ½ teaspoon
- Chia seeds - 1 tablespoon (optional)
Method
- Place cashews and dates in a food processor and blend until well combined
- Add lemon juice/rind and blitz for a further 5 seconds
- Form tablespoon of mixture into roll shapes (approx 30g per roll)
- Optional: Place chia seeds on a plate and roll rolls to coat
Storage: Store in airtight container in fridge for up to a week or freeze and take out as needed
