Recipe for success: Fibre Trail Mix

Trail mix is a handy snack to eat on the go. Mix and match nuts, seeds and fruit to find your favourite. 

Preparation time: 5 minutes

Cooking time: 8-10 minutes

Serves: 8 portions (45g)

Ingredients: 

  • Almonds - ¾ cup
  • Pumpkin seeds - ¼ cup
  • Sunflower seeds - ¼ cup
  • Dates (chopped) - ½ cup
  • Apricots (chopped) - ½ cup
  • Chia seeds - 1 tablespoon
  • Mixed spice  - ½ teaspoon
  • Salt - pinch
  • Egg white - 1

Methods:

  1. Pre-heat oven to 200°C; line a large baking tray with grease-proof paper
  2. Combine the almonds, seeds, dried fruit, mixed spice and salt in a large bowl; mix well
  3. Lightly beat egg white with a fork in a small bowl, then add to nut mixture, stirring to coat all ingredients evenly
  4. Spread mixture out on baking tray in a single layer and bake for 8-10 minutes until crisp and light brown

Storage: Once cooled completely, store in an airtight container and consume within 5 days
