Serves: 8 portions (45g)
Ingredients:
- Almonds - ¾ cup
- Pumpkin seeds - ¼ cup
- Sunflower seeds - ¼ cup
- Dates (chopped) - ½ cup
- Apricots (chopped) - ½ cup
- Chia seeds - 1 tablespoon
- Mixed spice - ½ teaspoon
- Salt - pinch
- Egg white - 1
Methods:
- Pre-heat oven to 200°C; line a large baking tray with grease-proof paper
- Combine the almonds, seeds, dried fruit, mixed spice and salt in a large bowl; mix well
- Lightly beat egg white with a fork in a small bowl, then add to nut mixture, stirring to coat all ingredients evenly
- Spread mixture out on baking tray in a single layer and bake for 8-10 minutes until crisp and light brown
Storage: Once cooled completely, store in an airtight container and consume within 5 days
