Recipe for success: Apricot Balls

You can make double quantities of this if you have a large food processor and to boost the protein content, why not include 2 tablespoons of skimmed milk powder?

Preparation time: 10 minutes

Serves: Makes 12-15 balls

Ingredients

  • Dried apricots - ½ cup
  • Dates - ½ cup
  • Pumpkin seeds - ½ cup
  • Chia seeds - 1 tablespoon
  • Ground cinnamon - ¼ teaspoon
  • Dessicated coconut (unsweetened) - to coat

Method

  1. Put all ingredients except pumpkin seeds in food processor and process until mixture forms in a big lump. 

  2. Break mixture up slightly with a spatula and add in the pumpkin seeds and pulse until combined.
  3. Using your hands to roll, make into balls using tablespoon of mixture per ball (approx. 1 inch diameter).

  4. Put desiccated coconut in a bowl and roll each ball to coat.

Storage: Store in an airtight container in the freezer and take out as needed. Once out of the freezer, store in fridge and consume within 2 days,
