Ingredients
1 large courgette
2 red peppers, chopped
1 onion, chopped finely
1 clove garlic, chopped finely
½-1 tsp dried chilli flakes (optional)
2 tins chopped tomatoes
Fresh basil, chopped (or dried if fresh not available)
1-2 tins cannellini beans, drained
Method
- In a large saucepan, saute onion & garlic in olive oil over a medium heat until onion softens
- Add the peppers and cook until soft
- Add chopped tomatoes and stir
- Add chilli flakes if you wish to add a bit of heat
- Add stock cube made up with water as per pack guidance
- Reduce heat to low and simmer for a few minutes then carefully blend to finer consistency. If soup is too thick add more water
- Season to taste with salt and pepper
- Drain cannellini beans then add to soup
- Simmer for about 10 minutes then serve topped with basil and your choice of bread.
