Healthy at home: Red pepper, tomato & cannellini bean soup


1 large courgette

2 red peppers, chopped

1 onion, chopped finely

1 clove garlic, chopped finely

½-1 tsp dried chilli flakes (optional)

2 tins chopped tomatoes

Fresh basil, chopped (or dried if fresh not available)

1-2 tins cannellini beans, drained



  1. In a large saucepan, saute onion & garlic in olive oil over a medium heat until onion softens
  2. Add the peppers and cook until soft
  3. Add chopped tomatoes and stir
  4. Add chilli flakes if you wish to add a bit of heat
  5. Add stock cube made up with water as per pack guidance
  6. Reduce heat to low and simmer for a few minutes then carefully blend to finer consistency. If soup is too thick add more water
  7. Season to taste with salt and pepper
  8. Drain cannellini beans then add to soup
  9. Simmer for about 10 minutes then serve topped with basil and your choice of bread.
