Ingredients
Cod (raw, flesh only), 5 small portions
185g broccoli (cut into florets)
100g courgettes (grated)
60g cheddar or vegan cheese (grated)
70g gluten free plain flour
¼ tsp salt
¼ tsp pepper
1 egg
3 tbsp lactose-free milk
1 tablespoon olive oil
For the aoili:
60ml mayonnaise
2 tsp fresh lime juice
½ tsp lime zest

Chop and steam the broccoli then mash. Grate the courgette.

Whisk the egg, milk and olive oil. Mix through the flour, salt and black pepper until thick and smooth. Then fold through the steamed broccoli, courgette and cheese.

Heat a large saute pan over medium heat. Add drizzle of olive oil. Using a ¼ cup (approx 60ml or 2 fl oz) measure, scoop the batter and drop into the pan. Flatten each fritter with a spatula. Allow to cook for 3 to 4 mins until golden brown. Continue until all batter is used.

In a small bowl whisk together the lime juice, zest and mayonnaise. Season to taste with salt and pepper.

Serve fritters with aioli (optional).
