Serves 4
Ingredients
4 minute steaks, cut into strips
3 peppers, sliced
1 medium red onion, sliced
Juice from 1 lime
¼ bunch fresh coriander, chopped
1 tsp olive oil
1 tsp smoked paprika
1 tsp ground cumin.
Ingredients - salsa
200g cherry tomatoes, roughly chopped
¼ bunch fresh coriander, chopped
Juice of 1 fresh lime
(Optional) ½ fresh mild/medium chili, finely chopped
Ingredients - guacamole
200g cherry tomatoes, finely chopped
2 avocados, roughly mashed
¼ bunch fresh coriander, chopped
Juice of 1 fresh lime
Method
- In a bowl, mix the beef strips, onion and peppers with the spices and lime juice. Add salt and pepper and mix well. Leave to marinade for 5 min +
- Heat the oil in a griddle or large frying pan. Add the veg and cook until the veg start to soften
- Add in the steak strips to the frying pan and cook to your preference
- Mix the chopped coriander through the fajitas before serving
- Serve with tortillas, low-fat natural yogurt, home-made guacamole and salsa (simply mix ingredients listed above) and a little grated cheese.
Tip: You can replace the beef with chicken breast or, to make it veggie, add some chickpeas and mixed beans.
