Healthy at home: Beef fajitas

Serves 4  

 

Ingredients 

4 minute steaks, cut into strips

3 peppers, sliced

1 medium red onion, sliced

Juice from 1 lime

¼ bunch fresh coriander, chopped

1 tsp olive oil

1 tsp smoked paprika

1 tsp ground cumin.  

 

Ingredients - salsa

200g cherry tomatoes, roughly chopped

¼ bunch fresh coriander, chopped

Juice of 1 fresh lime

(Optional) ½ fresh mild/medium chili, finely chopped

 

Ingredients - guacamole

200g cherry tomatoes, finely chopped

2 avocados, roughly mashed

¼ bunch fresh coriander, chopped

Juice of 1 fresh lime 

 

Method

  1. In a bowl, mix the beef strips, onion and peppers with the spices and lime juice. Add salt and pepper and mix well. Leave to marinade for 5 min +
  2. Heat the oil in a griddle or large frying pan. Add the veg and cook until the veg start to soften
  3. Add in the steak strips to the frying pan and cook to your preference
  4. Mix the chopped coriander through the fajitas before serving
  5. Serve with tortillas, low-fat natural yogurt, home-made guacamole and salsa (simply mix ingredients listed above) and a little grated cheese. 

 

Tip: You can replace the beef with chicken breast or, to make it veggie, add some chickpeas and mixed beans.
